Koval is the first small batch distillery in Chicago since the Prohibition era, and one of the leading craft distilleries in the US. It was founded in 2008, by Robert and Sonat Birnecker who abandoned their academic careers to follow their hearts. Following this untrodden rouge path, they named their distillery Koval, a Yiddish expression for someone, who “forges ahead.” Their formula to success is tripart—an outstanding work-life balance, a strong dedication to organic grains, and a squeaky-clean style of Spirits production.
